Makes 300ml jar
Ingredients:
1 cup olive oil
3 cloves garlic, sliced
1/2 banana shallot, sliced
3 spring onions
2 green chillies
10g chives
1 tbsp salt
1 tbsp maple syrup
1 tbsp sesame seeds
Method:

Finely dice green chillies, spring onions and chives

Add to a small heat proof dish along with sesame seeds and maple syrup and set aside.

Finely slice the garlic and shallot add to a cold frying pan and pour over the cold olive oil and bring the pan to a gentle simmer.

Stir constantly, watching the garlic and shallot very carefully so it doesn’t burn.

Once golden brown, using a sieve, strain the hot oil into the small heat safe dish over the top of the fresh chilli, chive and spring onions.

Leaving the strained garlic and onions to cool down before adding them back in.

Transfer this into a glass jar once cooled slightly and store in the fridge to be used upon pastas, salads, pizza and or our Tahini Cabbage recipe!
